Over several decades and sometimes centuries, several so called “additives” have become mainstay food ingredients and are essential in the processing and manufacturing of ready-to-eat food products. These additives/ingredients have several beneficial effects and are added to food in order to perform one or more of the following functions viz., (a) enhance nutritional value or health benefits; (b) modify consistency, structure, color or aesthetics; (c) enhance aroma or flavor; and (d) retain aroma or color and prolong shelf life. Targeted functions of added ingredients include: emulsifiers; fermentation agents; thickeners; stabilizers; leavening agents; buffering agents; anti-caking agents; gelling agents; raising agents; pH adjustment; conditioning; and flavoring. All ingredients have been approved for use in food and health supplement preparations.
Sweeteners and flavor enhancers boost the taste, and cut the sugar without adding extra calories. When used judiciously, they provide the desired level of sweet taste and flavor without affecting glycemic responses and without the high calorie content of regular sugars. Therefore, they have become ubiquitous in food and drink from cereals, cookies, syrups, carbonated drinks and the like.
Acesulfame K (for potassium) has long been used as a sweetener and additive in foods such as, baked products, because it is heat stable and prolongs shelf life. Compared to a common sugar such as sucrose, it is 200 times sweeter, it is similar in sweetness as aspartame, and about two-thirds as sweet as saccharin, and about one-third as sweet as sucralose. Stevia (glycosides) that is extracted from the leaves of the plant species Stevia rebaudiana, native to Brazil and Paraguaya, is a sweetener and sugar substitute that is about 30 to 150 times sweeter than common sugar and like Acesulfame K is heat-stable. Stevia has been widely used in Japan as a sweetener for decades and only recently (2011) the European Union approved stevia additives for use in food. High-purity stevia glycoside extracts are generally recognized as safe for food use in the US.
Xylitol is another sweetener that looks and tastes like sugar, has fewer calories and is non-glycemic. Several studies have suggested its various important benefits, including, improved dental health. Xylitol, a common ingredient in sugar-free chewing gums, can be found in small amounts in many fruits and vegetables and is therefore considered natural. Humans even produce small quantities of it via normal metabolism. It is also used in candies, mints, diabetes-friendly foods and oral-care products. Similar in sweetness as regular sugar, Xylitol has 40% fewer calories.

An important class of “active” food supplements, Probiotics, contain live cultures of microorganisms that are intended to have health benefits. Although people often think of bacteria and other microorganisms as harmful “germs,” many microorganisms help our bodies function properly. For example, bacteria that are normally present in our intestines help digest food, destroy disease-causing microorganisms, and produce vitamins. Large numbers of microorganisms live on and in our bodies. Many of the microorganisms in probiotic products are the same as or similar to microorganisms that naturally live in our bodies. Products sold as probiotics include foods (such as yogurt), dietary supplements, and products that aren’t used orally, such as skin creams.
